*Develops operating budget for the Dining Services area and sets up appropriate controls to review budget levels on a weekly basis.
*Establishes standards for the Dining Services area including board plan menu, cash operations, catering and nutrition areas.
Ensures that quality standards are met for all areas.
*Develops concepts for short and long-term planning for the department.
Ensures that special events are planned and implemented to offer diversity in the various dining/cash operation areas.
*Assists in long-term planning and capital expenditures planning for the dining services area.
Develops purchasing standards and insures compliance with purchasing procedures.
*Defines/determines staffing levels, approves hiring and firing of department members.
*Responsible for yearly staff performance reviews.
*Implements training programs for unit personnel and organizes and conducts monthly in-service meetings.
