Primary Purpose

Purchases all foods for Dining Services (Board Plan, Catering, and Cash Ops. Excluding C-store).  Oversees the meat shop and receiving areas and ensures that food items are properly handled, stored and distributed.

Responsibilities

Works cooperatively with others and accepts direction from supervisors.

*Places orders with vendors ensuring the best price and quality for various foods and supplies, based on College specifications.


*Calls in work orders for equipment repair for Proctor.


*Trains Receivers in sanitation procedures, proper handling, and storage.


*Receives all deliveries of food items and reviews invoices to ensure proper pricing, quality and quantity for Proctor.


Inventories, stocks and stores food supplies in appropriate area while rotating stock and using storage facilities in most efficient manner for Proctor.


*Ensures proper sanitation procedures are followed when storing foods at Proctor.


*Issues supplies and food to various dining units, while maintaining stock levels and tracking inventory for Proctor.


*Food production for special events, commencement, and reunion weeked.


*Works with Associate Director on primary vendor bids.


*Set spec's with Executive Chef for food items.


*Prepares meats and fish for board plan and catering use when needed.


*Orders alcoholic beverages for Middlebury College Friends.


*Oversees work of other employees in meat shop/receiving area as well as training the staff in proper and safe work habits.


*Acts as an interpreter for hearing impaired employee's when needed.


Researches and introduces new menu items for board, catering and cash operations.

Education & Training

High school diploma or equivalent experience required.  Associate's degree in restaurant or business management preferred.

Experience

2-4 years of experience in high volume food purchasing.

Knowledge

Must have knowledge of food items and possible substitutions.  Requires math knowledge and ability.  Must be familiar with meat cuts and handling. Must have computer knowledge for ordering.
