Primary Purpose

Oversees and prepares meal production and ensures that food is properly prepared, cooked and served. Oversees cook staff and kitchen operations and assists in menu planning.

Responsibilities

Works cooperatively with others and accepts direction from supervisors.

*Supervises and oversees all phases of meal production and works with all kitchen personnel to ensure proper quality and quantity of food production and meal preparation in a timely manner.

Reviews all incoming products for freshness to ensure food quality.

*Completes daily production sheets for Dining Service area.

*Trains cooks and kitchen staff in proper meal production techniques and food preparation.

*Ensures the highest standards in sanitary kitchen procedures, food preparation and storage are maintained.

*Oversees all cooks during meal preparation.

Researches and tests "new" menu items for board plan.

*Checks food for taste, consistency and healthy presentation.

*Performs other duties as assigned to assist the department in obtaining and maintaining its mission.

Education & Training

Associate's degree in Culinary Arts or equivalent experience required.

Experience

2-4 years of prior cook or chef experience preparing a variety of foods. 3-5 years of prior experience as a Chef preferred. Must be ServSafe certified in various sanitary procedures and proper food storage.

Knowledge

Must have knowledge of all food preparation methods, qualities, measurements and proper food storage techniques.
