Plans, implements and administers all activities of the Dining Services Department. (Reunion, Commencement, Orientation, Language Schools, Bread Loaf School of English, Bread Loaf Writer’s Conference, Vending and Laundry operations)
*Develops operating budget for the Dining Services area and sets up appropriate controls to review budget levels on a weekly basis.
*Establishes standards for the Dining Services area including board plan menu, laundry, vending and nutrition areas.
*Ensures that quality standards are met for all areas.
*Develops concepts for short and long-term planning for the department.
*Lead the College’s effort to increase the amount of food purchased in as close to campus as possible within our budget limits.
*Ensures that special events are planned and implemented to offer diversity in the various dining operation areas.
*Assists in long-term planning and capital expenditures planning for the dining services area.
Develops purchasing standards and insures compliance with purchasing procedures.
Negotiates long term contracts with broad line distributors/prime and secondary vendors, soft drink vendors, vending contractors, soap companies and other suppliers of dining services.
Works with design teams for renovations and or building of new dining operations
*Defines/determines staffing levels, approves hiring and firing of department members.
Meets with student focus group (Dining Committee) to keep in contact with the views of the student body.
*Responsible for yearly staff performance reviews.
Promotes Middlebury Dining and Middlebury College in local and national publications.
*Implements training programs for unit personnel and organizes and conducts monthly in-service meetings.
Spearheads environmental initiatives for department working with College, local, regional and national groups.
Works with students in their educational mission to inform and direct their research on class projects, independent studies and papers. Promote Middlebury College when working with students and administrators from other institutions.
Education & Training
Bachelor's degree in Food Service Management, Nutrition or related field required.
6-8 years of experience in management of large scale food service operations preferred.
Must have knowledge of budgeting, food service operations, capital, equipment related to dining services area (purchase, maintenance, etc.).
Excellent oral and written communication skills.
